Pablo Báez

Here I interview writer and chef Pablo Báez. We met through Substack and connected over our shared disdain for the restaurant industry. Pablo’s BOH (back of the house, the kitchen), I’m FOH (front of the house, the floor), so our experiences differ greatly.

Our chat was rocky at first, likely because I was up late the night before writing, forgot I had an interview at noon (fucking class act), and texted Pablo around 11:30 a.m. After some boomer-like technical difficulties, we had a great conversation.

Though I feel bad for waking him up, I’m glad I did. Pablo’s a good man. A father. I can tell he’s genuine, which is rare on this platform, and I respect it.
